Key Outputs and Responsibilities Maintain high standards of professionalism within the team. Provide disciplined and inspirational leadership to the kitchen team and ensure effectivefor high productivity and service excellence. Ensure all financial and record-keeping controls and systems are adhered to. Work with the Executive Chef to ensure menus andofferings are aligned with lodge quality standards. Work with the Executive Chef to monitor and achieve food scores and budget targets. Conduct daily meetings with Heads of Departments (HODs) to discuss the daily plan, including arrivals, departures, maintenance, food, special requests, and guest experiences in the absence of the Executive Chef. Ensure all health and safety compliance standards, including &Beyond COVID-19 protocols and HACCP protocols, are met or exceeded. Assist with uniform orders and related issues and ensure all staff wear the correct uniform at all times. Ensure all orders remain within the allocated budget and cost-per-head targets. Oversee month-end stock takes. Ensure the smooth daily operation of the kitchen and canteen. Introduce and maintain cleaning rosters that comply with Tanzanian regulations. Record and control staff sick leave, leave cycles, and work rosters in the absence of the Executive Chef. Attend HOD and morning meetings every day unless engaged in guest-related activities. Hold daily departmental meetings to communicate and hand over relevant information. Ensure effective communication between the kitchen, Lodge Managers, Guest Relations, and Butlers. Qualifications and Experience Formal culinary qualifications are required. At least2 years of experience as a Sous Chef, ideally within a5-star hospitality operation. Ability to work effectively under pressure. Excellent and consistent attention to detail. Guest-focused approach and positive outlook. Excellent teamwork skills. Commitment, hard work, and willingness to learn. Key Skills Required Passion for food and the overall food experience. Ability to effectively lead a team. Strong day-to-day and long-term management skills. Ability to motivate staff to consistently deliver high standards. Ability to think and act creatively within a team. Good knowledge of hospitality operations, including butler service, housekeeping, and laundry. Good computer skills.
